Dashi
4-5 | cups | water |
4-5 | inches | kombu |
1/2 | cup | bonito flakes |
Bring water to a boil with kombu. Once boiling, add bonito and remove from heat. Strain bonito and kombu out.
Add soy sauce to taste or save dashi to use as flavouring in Miso Soup or Zaru Soba dipping sauce -- or wherever else you need it.
