Miso Soup


dashi
miso paste
soy sauce
tofu
wakame
vegetables

Bring dashi to a simmer. Add long-cooking vegetables/seaweed and simmer until they start to soften. In a ladle, whisk 1-2Tbls of miso paste into the broth with chopsticks, then add back to broth. Continue adding miso and soy sauce until you like the taste. Simmer until vegetables are cooked. Add tofu and continue to cook until tofu is warm. Serve with whatever seems good as additional toppings (green onions, nori, panko, ...). Also good with ramen.
