Zaru Soba


200gramssoba noodles (or three bundles)
2cupsdashi
1/2cupsoy sauce
1/2cupmirin
1sheetnori sliced into thin strips
1Tbspgrated ginger
 green onions

Cook and drain noodles (save the water for sobacha if desired). Chill in ice water.

Mix dashi, soy sauce, and mirin for dipping sauce. Drain noodles right before serving and top with sliced nori, ginger, and onions.
