Potato Soup


4cupsChicken Soup
3 large potatoes
2 leeks (optional; for Vichyssoise)

Slice the leeks small and sautée in butter.

Peel and dice the potatoes. Boil in the chicken broth until soft. Purée or mash. Season with salt and pepper to taste.

With just potatoes, add a drizzle of cream and serve hot. Exceptionally comforting when you have a cold in midwinter.

With leeks, serve hot or cold, with cream or sour cream.
