Chicken Soup


1cooked chicken carcass, with meat and possibly stuffing
 whatever else is in the fridge and needs to go (carrots, onions, etc.)
 any savory spices you like

Start 24 hours before you have to put out the garbage. Makes 4-6 cups.

Put everything in the crock pot. Fill to top with water and cook on high, covered, for up to 24 hours, replenishing water as necessary. Strain through a colander and eat hot or freeze for later. Use as a base wherever chicken broth is called for. This soup is low salt (unless you add a lot) compared to storebought chicken stock, so recipes that need the salt call for chicken stock and recipes that don't call for chicken soup.
