Ginger Cake


1/2 cupbutter or margarine
1/2 cupwater
1/2 cupbrown sugar (light or dark)
1/2 cuplight molasses
1/4 cupdark corn syrup (or maple syrup)
1egg, beaten
1knob fresh ginger, size of an egg, pared and grated
1 1/2 cupssifted flour
1/4 tspsalt
1tspbaking soda

Melt margarine or butter with water. Whisk in sugar, molasses, and syrup, then egg. Add ginger and then stir in the dry ingredients. Beat just until smooth (batter may be slightly lumpy).

Bake 35-40 minutes at 350°F in a greased and floured 8x8 pyrex pan. Serve with warm Lemon Sauce I.
