Cucumber and Tomato Soup

Eat cold, when the air conditioning breaks


3cucumbers, peeled and coarsely chopped
1/4 cupparsley, no stems
1/2 cupgreen onions, chopped
2cloves garlic, minced
1cuptomato (or tomato-based vegetable) juice
1cupChicken Soup
3Tbspcider vinegar
2cupssour cream
 salt and pepper to taste
 sliced cherry tomatos (optional)

Blend the cucumbers, parsley, green onions, garlic, tomato juice, chicken soup and vinegar in a food processor.

Pour into large bowl and mix in sour cream, salt, and pepper.

Serve cold, garnished with cherry tomato slices (and extra dollops of sour cream, if desired).
