Chocolate Steamed Pudding

An old family recipe and a Christmas staple

3Tbbutter
2/3 cupsugar
1egg, beaten
21/4 cupsflour
21/2 tspbaking powder
1/2 tspsalt
1cupmilk
21/2 ozmelted unsweetened chocolate

Cream butter. Add sugar gradually. Add egg to mixture.

In a separate bowl, mix and sift together dry ingredients. Add milk to butter mixture alternately with dry ingredients.

Mix in chocolate. Mixture will be stiff!

Steam roughly 2 hours in a buttered steamer. Top cracks when pudding is done.

Serve hot with cold Hard Sauce. Steam for a minimum of 15 minutes to reheat.

See the steamer page for the important properties of steamers and instructions on how to steam the pudding. Libby: Family members have successfully used two pans, one suspended inside the other.

This is from an early version of the Fannie Farmer Cookbook, probably from the 1920's or 1930's.
