Butter Tarts

Another Pacific Northwest necessity


 pastry for 12 tarts (Short Crust Pastry is good)
Filling
1/3 cupbutter or margarine
1cupbrown sugar (dark is best)
2Tbmilk or cream
1/2 cupcurrants
1egg, beaten
1tspvanilla

Make 12 tart shells with the pastry.

Melt butter, then add sugar and milk or cream. Add currants, vanilla, and egg, mixing thoroughly. Put filling in tart shells.

Bake at 450°F for 8 minutes, then reduce heat to 350°F and bake until the tarts are delicately brown.

Make for the sugar fiend in the family.
