Short Crust Pastry


1 1/4 cupflour
1tspsalt
1Tbspwhite sugar
1/2 cupunsalted butter, chilled, cut into small pieces
1/8-1/4 cupcold water

Mix flour, salt, and sugar. Add butter and blend into a course meal. Add water until the dough holds together when pinched. Turn the dough onto a work surface, and gather together into a ball. Flatten to a disk, cover with plastic and chill for an hour. Cut into 4 inch rounds, and press rounds into cupcake tin (should make 12). Chill for another 30 min.
