Preheat oven to 350°F. Grease the bottom and half an inch up the sides of a loaf pan. Grate the zucchini or squash into a large bowl. Stir in the egg, sugar, vegetable oil, and vanilla. Add the dry ingredients and stir until combined. (Note on spices: use only 1/4 tsp allspice or nutmeg if you want a strong zucchini flavor; use up to 3/4 tsp nutmeg or allspice and up to 1/2 tsp of the others for a strongly spicy flavor.). Add nuts if desired. Pour into prepared pan. Bake for 50 minutes and let stand 5 minutes before cutting. |
