Zucchini Bread

From Signe's Banana Bread: I like to eat bananas, so I never have old bananas. Zucchini, on the other hand...


1-2zucchini or summer squash (1 large zucchini, 2 if they're smaller)
1egg
3/4 cupsugar
1/4 cupoil
1tspvanilla
11/2 cupsflour
11/2 tspbaking powder
1/4 tspbaking soda
1/2 tspsalt
 cinnamon, coriander, nutmeg, cloves, allspice, to taste
1/2 cupchopped nuts (optional)

Preheat oven to 350°F. Grease the bottom and half an inch up the sides of a loaf pan.

Grate the zucchini or squash into a large bowl. Stir in the egg, sugar, vegetable oil, and vanilla. Add the dry ingredients and stir until combined. (Note on spices: use only 1/4 tsp allspice or nutmeg if you want a strong zucchini flavor; use up to 3/4 tsp nutmeg or allspice and up to 1/2 tsp of the others for a strongly spicy flavor.). Add nuts if desired.

Pour into prepared pan. Bake for 50 minutes and let stand 5 minutes before cutting.
