Tube Pans


Tube pans are tall round pans with a cylinder rising through the middle so that the finished cake is doughnut-shaped.

There are two main types of tube pans. Because Angel Food Cake? needs to stick to the pan so that you can cool it upside down to encourage it to keep its fluffy texture, angel food pans are made with two separate pieces so you can use a knife to separate the cake from the pan after it cools.

Bundt pans are used for denser cakes that use stiff butter-based batters rather than egg white-based batters. These days, they are typically non-stick and can come in a variety of fancy shapes (dragons, castles, roses).
