Preheat oven to 400°F. Fry the panko in oil over medium heat until golden brown, then set to the side to cool. Tenderize the pork chops -- hit it thoroughly with a meat pounder or the dull side of a kitchen knife in a cross hatch pattern until it's larger and flatter than when you started. Reshape back to original dimensions with your hands. Rub salt and pepper into pork chops, then dredge them successively in flour, egg, and panko. Set prepared pork chops on a wire rack set on top of a baking sheet (so that there's air on all sides and they cook evenly) and bake for 20 minutes. Cut tonkatsu into 1" pieces and serve with rice and/or sliced cabbage and tonkatsu sauce. |
