Spent Grain Bread


3cupsspent grain
1/4 cupmolasses
1/2 tspsalt
1Tbspbutter or oil
1/2 cupwarm water
21/4 tspactive dry yeast
41/2 cupsflour

Leave the grain out so that it is room temperature. Add molasses, salt, and oil, and stir well.

Mix the yeast into the warm water and let sit until dissolved (about 10 minutes). Stir into the spent grain mixture.

Add flour gradually while kneading the dough. It will be stiff at first, but will become sticky again with continued kneading. Place dough in an oiled bowl and cover with a damp tea towel. Let rise until doubled in bulk, about 1.5 hours.

Punch down dough, shape into two loaves, and let rise until almost doubled in bulk, 1-1.5 hours.

Bake at 350°F for about an hour until done. Makes a very chewy bread.
