ShortbreadsTraditional Christmas cookies from Kay
Sift brown sugar to get rid of all lumps. Cream brown sugar and butter together. Sift cornstarch and flour together and add to butter mixture. Knead on a floured board. Roll to thickness desired (roughly 1/4") and cut into shapes. (Makes lovely tiny cut-out cookies, perfect for mailing to relatives.) Bake at 300°F until just slightly colored (20-30 minutes). This makes a double batch and should be the correct proportions. Kneading will prevent them from melting in the oven and losing their shape. |
