Traditional Christmas cookies from Kay


2cupssoftened butter
11/4 cuplight brown sugar
11/4 cupcornstarch
21/2 cupsflour

Sift brown sugar to get rid of all lumps. Cream brown sugar and butter together. Sift cornstarch and flour together and add to butter mixture. Knead on a floured board. Roll to thickness desired (roughly 1/4") and cut into shapes. (Makes lovely tiny cut-out cookies, perfect for mailing to relatives.)

Bake at 300°F until just slightly colored (20-30 minutes).

This makes a double batch and should be the correct proportions. Kneading will prevent them from melting in the oven and losing their shape.
