Shepherd's PieCould be made with beef, but then it would be "Cowboy's Pie" which just doesn't have the same ring
Sauté ground lamb with minced onion and rosemary and grated carrot; add a little bit of flour and some water to make a sauce from the juices. Cook peas (or corn) until not quite done. Find leftover mashed potatoes or make some fresh. In a greased casserole dish, layer the ground lamb on the bottom, the peas and parmesan (or corn - probably not corn and parmesan?) in the middle, and the mashed potatoes on top. Dot with butter. Bake at 400°F until potatoes are golden brown on the edges and tips. |
