Seven Minute Frosting

Essential for Dirt Cake


3/4 cupsugar
2Tbspwater
1/8 tspcream of tartar
1egg white
1/2 tspvanilla extract
 few grains salt

Heat water in the bottom half of a double boiler. Put all the ingredients except the vanilla in the top half of the double boiler and beat for 1 minute. Put the top half of the double boiler in the bottom half and combine beating over heat until the frosting stands up in stiff peaks. (Seven minutes only if eating by hand; generally shorter with an electric mixer.)

Remove frosting from heat and continue beating until spreadable. Mix in the vanilla, or flavor to taste.

This is the Marshmallow Fluff of frostings - sweet, white and very gooey.
