Seven Minute Frosting

Enough to frost a Dirt Cake


2large egg whites
1/4 cupwater
11/2 cupssugar
1/4 tsp cream of tartar or 2 tsp light corn syrup
1/8 tspsalt
1tspvanilla

Mis egg whites, water, sugar, cream of tartar, and salt in the top half of a deep double boiler. (See equipment section for details on double boilers.) Place over simmering water and beat until stiff.

Remove from heat and continue beating until spreadable. Stir in the vanilla.

This is excellent on any chocolate cakes. It also goes by "White Mountain Frosting".
