Named for its ingredients: Spinach, Hamburger, Eggs, Parmesan


1lbground beef (hamburger)
10ozfrozen chopped spinach
4eggs
1+cupgrated parmesan
 chopped onions (optional)

Brown hamburger over low heat in large frying pan with a lid. (Add chopped onion if desired.) When hamburger is browned, drain and add frozen spinach. Cover and cook over medium heat, stirring periodically, until spinach is fully melted. Meanwhile, beat eggs and add 1 cup of parmesan. When mixture in frying pan is hot, quickly stir in egg/parmesan mixture, smooth ingredients into layer on pan, and sprinkle reserved parmesan on top. Cover and cook over low heat for roughly 5 minutes or until top is bubbly and bottom is browned. Cut in large wedges and serve with Armenian Pilaf.
