Plum Sauce

12ozplum jam (3/4 pint), either store-bought or homemade
2Tbsprice vinegar
1Tbspbrown sugar
1Tbspdried minced onion
1tsppepper (red pepper flakes or mixed up pepper are good)
1clovegarlic, minced
1/2 tspground ginger

Put all ingredients in a small pot and bring to a boil. Cook until it stops smelling strongly of vinegar and starts smelling like plum sauce. Serve on goose, duck, whatever seems good.
