Peach Glacé Pie

Catherine's recipe, based on various recipes


 pastry for one 9 inch pie crust
 4-6blanched and peeled peaches
3/4 cupwater
3Tbspcornstarch
1cupsugar
1tspnutmeg
1tsplemon juice

Bake the pie shell in a hot oven (450°F) for 10-12 minutes. Chill.

Slice the peaches evenly, and line the pie shell in a spiral pattern.

Combine cornstartch, sugar, nutmeg, and water. Cook until the syrup is thick and clear, stirring constantly. Add lemon juice and pour over the pie.

Chill thoroughly.
