Mustard Sauce

With meats


2Tbdry mustard
1tspflour
1/4 tspsalt
1cupevaporated milk or cream
1/4 cupsugar
1egg yolk, beaten until thick
1/2 cupheated vinegar

Mix mustard, flour, salt and 1/4 cup evaporated milk.

Put the remaining evaporated milk and the sugar in a heavy pan or double boiler. Heat, then stir in the mustard mixture. Add the egg yolk, cook and stir until thick. Stir in the vinegar.

Particularly good on salty meats.
