The gooey kind


2large egg whites
1/4 tspcream of tartar
 sugar

The amount of sugar is a function of what kind of meringue you want. For Lemon Meringue Pie?, use a ratio of 2 egg whites to 1/4 cup sugar. For baked Meringues, use a ratio of 2 egg whites to 1/2 cup sugar.

Beat the egg whites until frothy.

Add the cream of tartar and 1 Tb of sugar and beat until soft peaks form.

While continuing to beat the egg whites, gradually add the remaining sugar. Beat until stiff and glossy.
