Meatloaf

Karl's recipe


1lbground beef
1/2 lbground pork
4slicesbrown bread, cubed
3-4eggs, beaten
1-2Tbport
 enough milk to bring eggs + port up to between 1 and 1/2 cups
1/2 tspPoultry Magic
1/2 cupgrated cheddar cheese

Combine the eggs, port, milk, and spices in a measuring cup. Mix the meat and bread in a large bowl (this works best by hand, but if you just pulled the meat out of the fridge it gets very cold, very quickly), then add the cheese. Add the egg mixture to the meat mixture and mix well (again by hand quickly, before your hands get too cold to function).

Fill four extra-large muffin tins with large handfuls of meatloaf, making small indentations around the edges to prevent the fat from overflowing onto the floor of the oven. Put a cookie sheet under the muffin pan, just in case. Bake at 425°F for about 45 minutes or until the internal temperature reaches 180°F.

Excellent with mashed potatoes.
