Mango Coconut Sticky Rice

Yummy Thai dessert


  sliced mango
2cupscooked sweet or glutinous rice
2canscoconut cream
1/2cupsugar (white looks better, brown tastes good)
3/4tspsalt

Make sure the rice stays warm while you make the sugar sauce. (Note that you can substitute arborio rice for the sweet/glutinous rice, but it won't be quite as sticky.)

Cook 1 can of coconut cream over low heat with the sugar and salt until smooth but not boiling. Mix the second can of coconut cream until smooth.

Add the sugar mixture to the rice, stirring until it's absorbed. Serve while warm. Generally one dollop of sweet rice needs 2-3 slices of mango and a healthy drizzle of plain coconut cream.
