Lemon Posset

Only seems to work in the UK


1cupdouble cream
1/3cupsugar (at least)
2-4Tbsplemon juice

Stir the sugar and lemon juice together. Gradually add to the double cream while stirring. It should get thicker and gloppier, like sour cream, but it should taste like someone added lemon meringue pie filling to whipped cream - tart, sweet, creamy. If it curdles, you're probably not in the UK. If it doesn't get thick and gloppy, adding more sugar might help. If you're desperate, you could try the cooked version, but it takes forever and I've never managed to get it to set properly (which is deeply frustrating after leaving it in the fridge for hours!).

Serve with gingersnaps or put it in a pie with a gingersnap crumb crust.
