Ginger Biscuits

Polly's Ginger Biscuits converted to American volume measures


1/2 cupbutter
1/2 cupsugar
1/4 cupbrown sugar
1 egg
11/2 Tbhoney or corn syrup or molasses
13/4 cupsall purpose flour
2tspbaking powder
2tspground ginger
 cupscandied ginger chopped to reasonably sized pieces for cookies (~150 g)

Preheat oven to 350°F.

Cream the butter and sugars. Beat in egg and honey. Add flour, baking powder, and ground ginger stir until combined. The consistency should be a sticky dough. Mix in candied ginger.

Shape into walnut sized balls and place on greased cookie sheet. Space widely; they spread. Bake 12-15 until golden brown with cracked tops. Should be a little gooey for soft cookies. Let cool on baking sheet for a few minutes before transferring to a wire rack.
