British Flapjacks

31/2 cupsrolled oats (275 g)
1cupsalted butter (225 g)
11/8 cupsdemerara sugar (225 g)
2heaped Tb golden syrup

Pre-heat the oven to 325°F and grease an 8x8 pan.

Melt the butter, sugar, and syrup together (on low if you use a microwave, stirring occasionally). Stir the oats into the butter-sugar mixture, making sure everything is well blended. Pack the mixture into the greased pan, pressing down with the back of a spoon to make sure it is firm and flat on top.

Bake for 35 minutes for flapjacks with a squishy center, longer for crisper flapjacks.

The squishy center flapjacks are basically chewy granola bars. Yummy!
