Coffee-Cake Muffins

Batter
11/2 cupssifted flour
1/2 cupsugar
1tspbaking powder
1/2 tspsalt
1beaten egg
2/3 cupmilk
2Tboil
Topping
1/2 tspcinnamon
1/4 cupbrown sugar
1Tbflour
1Tbmelted butter

Sift the dry ingredients together. Mix the egg, oil, and milk together and add to the sifted dry ingredients with a fork. Do not overbeat or your muffins will have giant holes in them!

Mix the topping ingredients together in a small bowl. Put the muffin batter in the muffin tins to about 2/3 full, then sprinkle the topping on.

Bake for about 20 minutes at 375°F.

These get dry and stale by the second day so eat them while they're fresh!

Signe: The original recipe was for half a batch and only really worked if you happened to have someone to share your half an egg with. This is a full batch, which makes 12 muffins. If you don't mind storing half an egg somewhere, you can make them in batches of 6, which is just about right for 2 or 3 people.
