Clay Pot

The bottom of the pot nests into the top. The pot needs to be soaked for 15-20 minutes in cool water before use. It should be placed into a cold oven to ensure that it doesn’t crack from the heat differential.

The clay pot is used when you want to roast something quickly and don't want it to dry out. The clay pot cooks food at a high temperature (425-450°F) for a relatively short period of time. If you choose to use a roasting pan instead of a clay pot, it will take significantly longer to cook the food.

It should be rinsed rather than washed with soap and should be allowed to build up a patina as it ages. Using soap runs the risk of making your food taste soapy. Do not wash in the dishwasher!

It is exceptionally good for roasting chicken, beef and lamb.
