Chocolate IcingsMany variations. Emergency Chocolate Chip IcingAs soon as the cake comes out of the oven, put a layer of chocolate chips on top. Put the cake back in the turned off oven to melt the chips. Spread them around. Enjoy. Chocolate Butter IcingMelt 2 oz semi-sweet baking chocolate with 2 Tbsp rum or coffee slowly. Beat in 5-6 Tbsp unsalted butter one tablespoon at a time. Beat the mixture over ice water until it has cooled to spreading consistency. Chocolate Coffee IcingMix 3 Tb cocoa, 3 Tb hot coffee, and 2 Tb butter until butter melts. Beat in icing sugar until correct texture is attained. Chocolate Cream IcingPlace 2 Tb unsalted butter, 3/4 cup semi-sweet chocolate chips, 6 Tb heavy cream, 11/4 cups sifted icing sugar, and 1 tsp vanilla in a heavy saucepan. Whisk over low heat until smooth. Cool slightly and add more sugar if necessary. Spread on cake while still warm. Chocolate Sour Cream IcingMelt 1/2 cup butter with 4 oz semi-sweet chocolate. Cool. Beat in sour cream until appropriate texture is reached. Add vanilla to taste. |
