Chicken Curry

1chicken
 salt, pepper, turmeric
2clovesminced garlic
11/2 cupsplain yogurt
 oil
1large onion
1cantomatoes
Spices
 curry powder
 cardamom
 coriander
 cumin
 ginger
 cinnamon
 turmeric

Bone the chicken and cut it up into bite-sized pieces. Marinate for at least 3 hours in salt, pepper, garlic, turmeric and yogurt (for the lactose intolerant, soy yogurt works just as well).

Sauté onions in oil. Add canned tomatoes, then spices (experiment with quantities; everyone's going to have their own preferences). Add the chicken mixture and simmer about 45 minutes (keep the heat low to encourage the yogurt not to separate or curdle).

Serve with rice or noodles or bread or ...

It's better the day after it's cooked.
