Chewy Oatmeal Chocolate Coconut Cookies

1cupsoftened butter
11/2 cupspacked brown sugar
1/2 cupwhite sugar
2eggs
2Tbmilk
2tspvanilla
13/4 cupsall purpose flour
1tspbaking soda
1/2 tspsalt
3cupsrolled oats
2cupssemisweet chocolate chips
1cupchopped walnuts (optional; also good with pecans)
1cupshredded coconut

In a large bowl, cream together the butter and the sugars until smooth. Beat in the eggs (one at a time if you like), then stir in the milk and vanilla.

Combine the flour, baking soda, and salt. Stir it into the sugar mixture until well blended. Stir in the oats, chocolate chips, nuts, and coconut until evenly distributed.

Drop by rounded tablespoons onto ungreased cookie sheet. (The original recipe calls for rounded tablespoons, but they're excellent made into balls of 2 or 3 tablespoons each, then squished about 3/4" thick and baked for 10-15 minutes.)

Bake 10-12 minutes at 375°F for a chewy cookie or 14 minutes for a firm cookie.

Cool for 1 minute on the cookie sheet and remove to a wire rack. Cool completely and store in a tightly sealed container.
