Banana Bread

Minor modifications to Julia's recipe


2-3very old bananas (the older, the better)
1egg
3/4 cupsugar
1/4 cupoil
1tspvanilla
11/2 cupsflour
11/2 tspbaking powder
1/4 tspbaking soda
1/2 tspsalt
 cinnamon, nutmeg, cloves, allspice, to taste
1/2 cupchopped nuts (optional)
1/2 cupchocolate chips (optional)

Preheat oven to 350°F. Grease the bottom and half an inch up the sides of a loaf pan.

Mash the bananas in a large bowl. Stir in the egg, sugar, vegetable oil, and vanilla. Add the dry ingredients and stir until combined. (Note on spices: use only 1/4 tsp cinnamon if you want a strong banana flavor; use up to 3/4 tsp cinnamon and up to 1/2 tsp of the others for a strongly spicy flavor.). Add nuts and/or chocolate chips if desired.

Pour into prepared pan. Bake for 50 minutes and let stand 5 minutes before cutting.
