Pork Roast

From Ginger Tea Makes Friends


  boned pork roast
1/2 tsppepper
1/4 tspcayenne pepper
1tspsalt
2tspsugar
1cupapple juice
2Tbspbutter or lard
2tspcrushed basil
  chopped vegetables, potatoes, apples (optional)

Preheat oven to 400°F.

Mix together pepper, cayenne pepper, salt, and sugar. Massage spices into the roast. Put in a baking dish fat side up and bake for 20 minutes.

Take out roast and pour apple juice over roast, spread with butter, and sprinkle with basil. Lower oven temp to 300°F and return roast to oven. Bake 30 minutes/pound, basting often.

If adding other ingredients to the roasting pan, put in carrots and other root vegetables 1 1/2  hours before the roast is done, potatoes and small onions 1 hour, and apples 30 minutes - 1 hour depending on how soft you want them.
